4 boneless, skinless chicken thighs (about 1.5 lbs)

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

1 teaspoon paprika

Juice of 1 lemon

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Season the Chicken: Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.

    Heat the Oil: In a large skillet over medium-high heat, add olive oil. Once shimmering, carefully place the chicken thighs in the skillet.

      Sear the Chicken: Cook the chicken for about 5-6 minutes on one side until golden brown. Flip and cook for another 4-5 minutes until cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

        Make the Garlic Butter: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, thyme, and paprika. Sauté for about 1 minute until fragrant.

          Add Tomatoes: Add the halved cherry tomatoes to the pan and toss them gently with the garlic butter mixture. Cook for about 2 minutes until the tomatoes start to soften.

            Combine and Finish: Return the chicken to the skillet, squeezing the lemon juice over everything. Allow it to heat through for another 1-2 minutes, until well combined and the chicken is coated in the garlic butter sauce.
