1 cup spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Zest of 1 lemon (for additional flavor)

Sauté Aromatics: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

    Toast Orzo: Add the orzo pasta to the skillet and stir for about 2-3 minutes until lightly toasted. This adds a nutty flavor to the dish.
