1 pound Italian sausage (mild or spicy)

2 tablespoons olive oil

1 large onion, thinly sliced

2 bell peppers (red and yellow for color), thinly sliced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

½ cup chicken or vegetable broth

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Sausages: In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the Italian sausages and brown them on all sides for about 5-7 minutes. Remove the sausages from the pan and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and bell peppers. Sauté for about 5 minutes, or until the onions become translucent and the peppers start to soften. Stir in the minced garlic, oregano, basil, and red pepper flakes, if using. Cook for an additional minute until fragrant.

        Combine Ingredients: Slice the browned sausages into bite-sized pieces and add them back to the skillet. Add the halved cherry tomatoes and pour in the chicken or vegetable broth. Season with salt and pepper to taste. Stir everything well to combine.

          Bake the Dish: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the sausages are cooked through and the flavors meld together.
