4 salmon fillets (about 6 oz each)

2 cups baby potatoes, halved

1 cup asparagus, trimmed

1 cup cherry tomatoes, halved

4 tablespoons unsalted butter

3 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Veggies: In a large mixing bowl, combine the halved baby potatoes, trimmed asparagus, and halved cherry tomatoes. Drizzle with 2 tablespoons of olive oil, season with salt, and pepper, then toss to coat evenly.

      Arrange on Baking Sheet: Spread the seasoned veggies evenly on one side of a large rimmed baking sheet or roasting pan.

        Make the Lemon Butter Sauce: In a small saucepan over medium heat, melt 4 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Stir in the lemon juice, lemon zest, dried thyme, and oregano. Remove from heat.

          Add Salmon: Move the veggies to one end of the baking sheet, and place the salmon fillets on the other end. Drizzle the lemon butter sauce generously over the salmon, reserving some for garnish.

            Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the veggies are tender.

              Garnish: Once out of the oven, drizzle any remaining lemon butter sauce over the salmon and veggies. Sprinkle fresh chopped parsley on top for color and flavor.
