One-Pan Lemon Garlic Chicken and Rice

4 boneless, skinless chicken thighs (or breasts)

2 cups jasmine rice, rinsed

4 cups low-sodium chicken broth

4 cloves garlic, minced

1 medium onion, diced

1 large lemon (zested and juiced)

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup frozen peas

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, and half of the lemon juice and zest. Let it marinate for about 15 minutes to enhance the flavors.

    Sauté the Aromatics: In a large skillet or a deep frying pan over medium heat, add the olive oil. Once hot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.

      Brown the Chicken: Push the onions and garlic to the side of the pan and place the marinated chicken thighs in the center. Sear them for about 5 minutes on each side until golden brown. Remove the chicken and set aside.

        Toast the Rice: In the same pan, add the rinsed jasmine rice. Stir it around in the pan for 1-2 minutes to lightly toast it, absorbing the flavors left in the pan.

          Combine Ingredients: Add the chicken broth, remaining lemon juice, lemon zest, dried oregano, and the frozen peas to the rice. Stir well to combine.

            Simmer: Return the browned chicken to the skillet, nestling it on top of the rice. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is cooked and the chicken is tender.

              Rest and Fluff: Once cooked, remove the pan from the heat. Let it sit covered for another 5 minutes. Remove the lid and fluff the rice gently with a fork.
