One-Pan Lemon Garlic Shrimp

Ingredients
  

1 pound large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/4 cup parsley, chopped (for garnish)

Cooked rice or pasta, for serving (optional)

Instructions
 

Prepare the Shrimp: In a large bowl, combine shrimp, 2 tablespoons of olive oil, lemon juice, lemon zest, red pepper flakes, smoked paprika, salt, and pepper. Toss to coat well and let marinate while you prepare the other ingredients.

    Cook the Shrimp: Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Be careful not to burn the garlic.

      Add Shrimp to Skillet: Immediately add the marinated shrimp to the skillet. Cook for 2-3 minutes on one side until pink, then flip and cook for another 1-2 minutes until fully cooked through.

        Incorporate Vegetables: Add cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to blister. Then, toss in fresh spinach and cook until wilted.

          Finishing Touches: Remove the pan from heat. Adjust seasoning with salt and pepper, if necessary. Garnish with chopped parsley.

            Serve: Serve the lemon garlic shrimp warm over cooked rice or pasta if desired. Enjoy!
