One-Pan Lemon Garlic Shrimp with Broccoli

1 pound (450g) large shrimp, peeled and deveined

2 cups fresh broccoli florets

4 cloves garlic, minced

1 lemon, zested and juiced (about 2 tablespoons juice)

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 teaspoon dried oregano

Fresh parsley, chopped (for garnish)

1 cup cherry tomatoes, halved (optional)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Shrimp: In a bowl, combine the shrimp with half of the lemon juice, lemon zest, minced garlic, and red pepper flakes. Season with salt and pepper. Allow it to marinate for about 15 minutes while you prep the broccoli.

    Sauté the Broccoli: In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium heat. Add the broccoli florets and sauté for about 3-4 minutes until they turn bright green and are tender-crisp. Remove the broccoli from the pan and set aside.

      Cook the Shrimp: In the same pan, add an additional tablespoon of olive oil. Once hot, add the marinated shrimp to the pan in a single layer. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque.

        Combine Ingredients: Add the sautéed broccoli back into the pan along with cherry tomatoes (if using) and the remaining lemon juice. Sprinkle in the dried oregano. Toss everything together gently to combine, cooking for another minute to warm through.

          Taste and Adjust: Taste the mixture and adjust the seasoning with more salt, pepper, or red pepper flakes as desired.

            Serve: Transfer the lemon garlic shrimp and broccoli to a serving dish or individual bowls. Garnish with fresh parsley and serve over cooked rice or quinoa, if desired.
