One-Pan Sausage & Peppers with Baby Potatoes

1 lb Italian sausage (mild or spicy, your choice)

1 lb baby potatoes, halved

2 bell peppers (red and yellow for color), sliced

1 medium onion, sliced

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C). This will ensure even cooking for all the ingredients.

    Prepare the Ingredients: In a large mixing bowl, combine the halved baby potatoes, sliced bell peppers, and sliced onion. Drizzle with 2 tablespoons of olive oil, sprinkle with paprika, oregano, red pepper flakes (if using), salt, and pepper. Toss everything together until the vegetables are well coated.

      Brown the Sausage: Heat a large oven-safe skillet over medium-high heat. Add the remaining tablespoon of olive oil. Once hot, add the Italian sausage links. Brown them on all sides for about 5-7 minutes. You want them nicely seared for added flavor.

        Combine Ingredients: Once the sausages are browned, remove them from the skillet and set aside momentarily. In the same skillet, add the garlic and sauté for about 30 seconds until fragrant. Then, add your prepared vegetable mixture to the skillet and stir to combine.

          Add Sausages Back In: Nestle the browned sausages back into the skillet among the vegetables. Spread everything out evenly for consistent cooking.

            Roast in the Oven: Transfer the skillet to the preheated oven and roast for about 30-35 minutes or until the potatoes are tender and cooked through, and the sausages are fully cooked (internal temperature should reach 160°F or 70°C).
