Ingredients

8 oz elbow macaroni

2 cups vegetable broth

1 cup heavy cream

1/2 cup balsamic vinegar

1/2 cup grated Parmesan cheese

1 cup shredded sharp cheddar cheese

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

Salt to taste

1/2 cup chopped fresh basil (for garnish)

1/2 cup sun-dried tomatoes, chopped (optional)

Instructions

Cook the Pasta: In a large pot, combine the elbow macaroni and vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce to a simmer and cook, stirring occasionally, for about 8-10 minutes, or until the macaroni is al dente and most of the liquid has absorbed.

Add the Cream and Balsamic: Stir in the heavy cream and balsamic vinegar to the cooked macaroni. Mix well to combine, allowing the pasta to soak in the flavors.

Cheesy Goodness: Gradually add the grated Parmesan cheese and shredded cheddar cheese, stirring continuously until the cheeses have melted and the sauce becomes creamy.

Season It Right: Sprinkle in the garlic powder, onion powder, black pepper, and salt to taste. Stir well to ensure all the flavors meld together.

Optional Flavor Boost: If using sun-dried tomatoes, fold them into the mac and cheese for an added burst of flavor.

Serve and Garnish: Once everything is fully mixed and heated through, remove from heat. Serve hot, garnished with fresh basil for a pop of color and flavor.

Enjoy your creamy Balsamic Vinaigrette Mac and Cheese!
