One-Pot Cajun Chicken Alfredo

1 pound boneless, skinless chicken breasts, sliced thin

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, chopped

1 bell pepper (any color), sliced

1 cup cherry tomatoes, halved

4 cups chicken broth

12 ounces fettuccine or linguine (uncooked)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for extra heat

Instructions
 

Season the Chicken: In a bowl, toss the sliced chicken breasts with the Cajun seasoning until evenly coated.

    Sauté Chicken: In a large pot or deep skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

      Cook the Vegetables: In the same pot, add the chopped onion and bell pepper. Sauté until the onion is translucent, about 3-4 minutes. Add the minced garlic and cherry tomatoes, cooking for another 2 minutes until fragrant.

        Combine Ingredients: Pour in the chicken broth and bring it to a boil. Once boiling, add the uncooked fettuccine or linguine. Stir well to prevent sticking. Reduce heat to medium and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.

          Add Cream and Cheese: Once the pasta is cooked, lower the heat and pour in the heavy cream. Stir to combine, then add the grated Parmesan cheese, mixing until melted and creamy. Season with salt and pepper to taste.

            Return Chicken to Pot: Add the sautéed chicken back to the pot, stirring to combine everything. If desired, sprinkle with red pepper flakes for additional heat.
