1 medium butternut squash (about 2 pounds), peeled, deseeded, and cubed

1 tablespoon olive oil

1 medium onion, diced

1 carrot, diced

1 potato (Yukon Gold or Russet), peeled and diced

4 cups vegetable broth

1 cup coconut milk (full fat for creaminess)

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon nutmeg

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Optional: Red pepper flakes for a bit of heat
