2 cups elbow macaroni

1 lb ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

4 cups chicken or vegetable broth

1 cup canned diced tomatoes (with juices)

1 cup heavy cream

1 cup shredded cheddar cheese (plus more for topping)

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pot. Use a wooden spoon to break it apart as it cooks. Season with salt and pepper. Cook until browned and no longer pink, about 5-7 minutes.

      Add Seasonings and Liquids: Stir in the taco seasoning, followed by the chicken or vegetable broth, canned diced tomatoes, and elbow macaroni. Bring the mixture to a gentle boil.
