Ingredients

1 lb ground turkey

12 oz penne pasta

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil and extra Parmesan for garnish

Instructions

Sauté the Turkey: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, stirring until fragrant (about 2-3 minutes). Add the ground turkey, season with salt and pepper, and cook until browned, breaking it apart with a spoon as it cooks (approximately 5-7 minutes).

Add Pasta and Broth: Once the turkey is browned, add the penne pasta, chicken broth, Italian seasoning, and red pepper flakes (if using) to the pot. Stir everything together, ensuring the pasta is submerged in the liquid.

Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 12-15 minutes, or until the pasta is al dente and has absorbed most of the chicken broth, stirring occasionally to prevent sticking.

Stir in Cream and Cheese: Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream, grated Parmesan cheese, cherry tomatoes, and spinach. Cook for an additional 2-3 minutes, allowing the cheese to melt and the spinach to wilt into the pasta.

Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or Italian seasoning as desired.

Serve: Remove from heat and let it stand for a few minutes. Serve hot, garnished with fresh basil and extra Parmesan cheese on top.
