One Pot Gnocchi with Meat & Feta

1 lb (450g) store-bought potato gnocchi

1 lb (450g) ground beef (or turkey for a lighter option)

1 medium onion, diced

3 garlic cloves, minced

1 bell pepper, diced (red or yellow)

1 can (14.5 oz) crushed tomatoes

1 cup beef or vegetable broth

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional)

Salt and black pepper to taste

1 cup fresh spinach, roughly chopped

½ cup feta cheese, crumbled

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté the Meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper; cook until they are soft and translucent, about 3-4 minutes. Add the minced garlic and ground meat, breaking it up with a spatula. Cook until the meat is browned and no longer pink, about 5-6 minutes. Season with salt, black pepper, oregano, basil, and red pepper flakes (if using).

    Add Tomato and Broth: Stir in the crushed tomatoes and broth. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld.

      Incorporate Gnocchi: Add the gnocchi directly into the pot. Cover and cook for an additional 5-7 minutes, stirring occasionally, until the gnocchi are tender and cooked through.

        Finish with Spinach and Feta: Once the gnocchi are done, stir in the chopped spinach and crumbled feta cheese. Cook for another 2 minutes until the spinach wilts and the cheese begins to melt. Taste and adjust seasoning if necessary.
