One-Pot Lemon Chicken Pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 cup onion, finely chopped

2 cups low-sodium chicken broth

12 ounces spaghetti (or your pasta of choice)

1 cup cherry tomatoes, halved

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 cup heavy cream

1 cup freshly grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned, about 5-7 minutes.

    Add the minced garlic and chopped onion to the pot. Sauté for an additional 2-3 minutes, until the onion is soft and translucent.

      Pour in the chicken broth and bring to a simmer. Add the pasta, cherry tomatoes, lemon zest, lemon juice, oregano, and thyme. Stir everything together, ensuring the pasta is submerged in the liquid.

        Cover the pot and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Reduce the heat to low and stir in the heavy cream and Parmesan cheese until fully combined and creamy. Adjust seasoning with additional salt and pepper if needed.

            Remove from heat and let it sit for a couple of minutes. Garnish with fresh parsley before serving.
