12 oz (340g) penne pasta

1 lb (450g) spicy Italian sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes with green chiles

4 cups (960ml) chicken broth

1 cup (240ml) heavy cream

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

1 cup (100g) shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced spicy Italian sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.

    Cook Vegetables: In the same pot, add the diced onion and red bell pepper. Sauté for about 3-5 minutes until they become soft. Stir in the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Add the browned sausage back to the pot. Stir in the Cajun seasoning, smoked paprika, cayenne pepper, and a pinch of salt and pepper. Mix well to combine the flavors.

        Add Pasta and Liquid: Pour the chicken broth and diced tomatoes (with their juices) into the pot. Bring the mixture to a boil. Add the penne pasta, stirring well to combine.

          Simmer: Reduce the heat to low and cover the pot. Let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid has been absorbed.

            Incorporate Cream and Cheese: Remove the pot from the heat and stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the pasta is creamy. Taste and adjust seasoning, if necessary.
