12 oz (340 g) penne pasta

1 lb (450 g) smoked sausage, sliced (andouille sausage is a great choice)

1 medium onion, diced

4 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (14.5 oz) diced tomatoes, with juice

2 cups low-sodium chicken broth

1 cup heavy cream

2 tablespoons Cajun seasoning (adjust to taste)

1 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for extra heat)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook for about 5-7 minutes, or until browned. Remove the sausage from the pot and set it aside.

    Sauté Vegetables: In the same pot, add the diced onion and bell pepper. Sauté for about 3-4 minutes, or until they start to soften. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Return the browned sausage to the pot. Add in the Cajun seasoning, paprika, black pepper, and cayenne pepper. Stir well to coat the sausage and vegetables.

        Add Pasta and Liquids: Pour in the diced tomatoes (with juice), chicken broth, and heavy cream. Stir to combine. Bring the mixture to a simmer.

          Cook the Pasta: Add the penne pasta to the pot, ensuring it is submerged in the liquid. Reduce the heat to low and cover the pot. Cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
