8 oz spaghetti

1 lb ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) diced tomatoes, undrained

1 cup beef broth (or water)

1 can (14 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 tbsp olive oil

Fresh cilantro, for garnish

Sliced jalapeños, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and ground beef (or turkey) to the pot. Cook until the meat is browned, breaking it apart with a spoon, about 5-7 minutes.

      Stir in the taco seasoning and cook for another minute to toast the spices.

        Add the undrained diced tomatoes, beef broth, black beans, corn, and spaghetti to the pot. Stir until well combined.

          Bring the mixture to a boil, then reduce the heat and cover. Let it simmer for about 10-12 minutes, or until the spaghetti is cooked al dente, stirring occasionally to prevent sticking.

            Once cooked, remove the pot from the heat and stir in half of the shredded cheddar cheese until melted and mixed through.

              Serve hot, garnished with fresh cilantro, additional cheese, jalapeños, and a dollop of sour cream if desired.
