Oven Baked Chicken Taquitos

2 cups shredded cooked chicken (rotisserie chicken works great)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup black beans, drained and rinsed

1/4 cup corn (canned or frozen)

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

10 small flour tortillas (or corn if preferred)

Cooking spray or olive oil for brushing

Optional toppings: sour cream, guacamole, salsa

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Make the Filling: In a large mixing bowl, combine the shredded chicken, cheese, black beans, corn, cilantro, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined.

      Prepare the Tortillas: When the oven is preheated, warm the tortillas in the microwave for about 30 seconds to make them pliable. This prevents them from cracking when you roll them.

        Assemble the Taquitos: Place about 2 tablespoons of the chicken mixture in the center of each tortilla. Roll them tightly and place seam side down on the prepared baking sheet.

          Spray with Cooking Oil: Lightly spray the taquitos with cooking spray or brush them with olive oil for a crispy texture while baking.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the taquitos are golden brown and crispy. You may want to flip them halfway through to ensure even crispiness.

              Serve: Remove from the oven and let them cool for a couple of minutes. Serve with your favorite toppings such as sour cream, guacamole, or salsa.
