Oven Fried Potatoes & Onions

4 medium-sized russet potatoes, scrubbed and cut into wedges

1 large yellow onion, sliced into thin rings

1/4 cup olive oil

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon dried rosemary

1 teaspoon dried thyme

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Potatoes: In a large bowl, add the potato wedges. Drizzle with half of the olive oil and sprinkle with garlic powder, paprika, rosemary, thyme, salt, and pepper. Toss well until the potatoes are evenly coated with the oil and seasonings.

      Arrange on the Baking Sheet: Spread the potato wedges out in a single layer on one side of the prepared baking sheet. Make sure they aren't overcrowded to allow them to crisp up nicely.

        Add the Onions: In the same bowl used for the potatoes, add the onion rings. Drizzle the remaining olive oil and toss to coat. Lay the onion rings on the other side of the baking sheet next to the potatoes.

          Bake: Place the baking sheet in the preheated oven and bake for 30-35 minutes. Flip the potato wedges and onion rings halfway through to ensure even crispiness. Bake until the potatoes are golden brown and crispy, and the onions are caramelized.

            Garnish and Serve: Once cooked, remove the baking sheet from the oven. Garnish the potatoes and onions with freshly chopped parsley for a pop of color and serve hot.
