4 whole mackerel, cleaned and scaled

3 tablespoons paprika (sweet or smoked, based on preference)

2 cloves garlic, minced

1 tablespoon olive oil

1 lemon, zested and juiced

1 teaspoon sea salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Marinade: In a bowl, mix the paprika, minced garlic, olive oil, lemon zest, lemon juice, sea salt, and black pepper. Stir until well combined to form a paste.

      Prepare Mackerel: Pat the mackerel dry with paper towels. Make three diagonal slashes on each side of the fish - this helps the marinade penetrate and ensures even cooking.

        Marinate Fish: Rub the paprika mixture generously over each mackerel, making sure to get it into the slashes and cavity of the fish. Let it marinate for at least 15 minutes to absorb the flavors.

          Arrange on Baking Tray: Line a baking tray with parchment paper. Place the marinated mackerel on the tray, spaced apart.

            Roast the Fish: Place the tray in the preheated oven and roast the mackerel for about 20-25 minutes, or until the fish is cooked through and the skin is crispy.

              Check for Doneness: The mackerel is done when the flesh flakes easily with a fork and the internal temperature reaches 145°F (63°C).
