4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

2 tablespoons balsamic vinegar

1 tablespoon honey

1 tablespoon olive oil

Salt and pepper to taste

Fresh thyme leaves, for garnish (optional)

Cooked rice or quinoa, for serving

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Onions and Garlic: In the same skillet, lower the heat to medium and add the sliced onions. Sauté for about 3 minutes, until they become translucent. Add the minced garlic and cook for an additional minute, stirring constantly to avoid burning.

        Add the Peaches: Stir in the peach slices and cook for another 2-3 minutes, until they start to soften.

          Create the Sauce: Pour in the chicken broth, balsamic vinegar, and honey. Stir well, then bring the mixture to a gentle simmer. Allow it to reduce for 5 minutes, which will intensify the flavors.

            Return the Chicken to the Pan: Once the sauce has thickened slightly, return the chicken breasts to the skillet, covering them with the peach-onion mixture. Simmer for an additional 2-3 minutes to warm the chicken through.

              Serve: Taste and adjust seasoning with additional salt and pepper if required. Serve the peach chicken over a bed of cooked rice or quinoa, drizzling with extra sauce from the skillet. Garnish with fresh thyme if desired.
