Ingredients

For the Dough:

4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

½ cup granulated sugar

1 teaspoon salt

½ cup whole milk, warmed

½ cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon vanilla extract

For the Filling:

½ cup brown sugar, packed

2 teaspoons ground cinnamon

¼ cup unsalted butter, softened

2 cups fresh peaches, peeled and diced (or canned, drained)

1 tablespoon cornstarch (for thickening)

For the Topping:

1 cup powdered sugar

2 tablespoons cream cheese, softened

2-3 tablespoons milk

½ teaspoon vanilla extract

Instructions

Make the Dough: In a large mixing bowl, combine the warmed milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.

Add Remaining Ingredients: Stir in the melted butter, eggs, and vanilla extract until combined. Gradually add the flour and salt, mixing until a dough begins to form. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm environment for 1-1.5 hours, or until doubled in size.

Prepare the Filling: In a medium bowl, mix the brown sugar and cinnamon. Toss the diced peaches with cornstarch in another bowl to coat.

Roll Out the Dough: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle about 16x12 inches.

Assemble the Rolls: Spread the softened butter evenly over the dough. Sprinkle the brown sugar and cinnamon mixture over the butter, leaving a small edge. Evenly distribute the diced peaches on top.

Roll and Cut: Starting at one long edge, carefully roll up the dough tightly into a log. Cut the log into 12 equal slices and arrange them in a greased 9x13 inch baking dish.

Second Rise: Cover the rolls lightly with plastic wrap or a cloth, and let them rise for another 30-45 minutes while you preheat the oven to 350°F (175°C).

Bake: Once risen, bake the rolls in the preheated oven for 25-30 minutes, or until golden brown.

Prepare the Topping: While the rolls are baking, whisk together the powdered sugar, cream cheese, milk, and vanilla extract until smooth and creamy.

Glaze the Rolls: Once baked, let the rolls cool for about 10 minutes before drizzling the cream cheese glaze over the top.

Serve: Enjoy the warm Peach Cobbler Cinnamon Rolls fresh from the oven, but they are also delicious at room temperature!
