Peach Glazed Chicken

4 boneless, skinless chicken breasts

2 ripe peaches, diced (plus extra for garnish)

1/4 cup peach preserves

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon olive oil

Salt and pepper to taste

Fresh basil or cilantro for garnish

Prepare the Marinade: In a bowl, combine the diced peaches, peach preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and grated ginger. Mix well until all ingredients are blended smoothly.

    Marinate the Chicken: Season the chicken breasts with salt and pepper. Place them in a resealable plastic bag or a shallow dish, and pour half of the peach marinade over the chicken. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Preheat the Grill or Oven: If grilling, preheat your grill to medium-high. If baking, preheat your oven to 375°F (190°C).

        Cook the Chicken: Remove the chicken from the marinade, and reserve the remaining marinade. If grilling, lightly brush the grill grates with olive oil and cook the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F (75°C). If baking, place the chicken in a greased baking dish and bake for 25-30 minutes.

          Prepare the Glaze: In a small saucepan, pour in the reserved peach marinade and bring to a simmer over medium heat. Let it boil gently for about 5-10 minutes, stirring occasionally, until it thickens to a glaze consistency.

            Combine: Once the chicken is cooked, brush it generously with the glaze and cook for an additional 2 minutes on the grill or return to the oven for 5 minutes to set the glaze.

              Serve: Plate the glazed chicken, garnish with fresh peach slices and chopped basil or cilantro. Drizzle any remaining glaze over the top for extra flavor.
