2 boneless, skinless chicken breasts

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp cumin

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

1 ripe peach, diced

¼ cup red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

¼ cup fresh cilantro, chopped

Juice of 1 lime

8 small corn tortillas

½ cup crumbled feta cheese or queso fresco (optional)

Fresh lime wedges for serving

Marinate the Chicken:

    In a small bowl, mix together garlic powder, onion powder, smoked paprika, cumin, salt, black pepper, and olive oil to create a marinade. Coat the chicken breasts thoroughly with the marinade and let it sit for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

      Grill the Chicken:

        Preheat your grill or a grill pan over medium-high heat. Once hot, place the marinated chicken on the grill. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for about 5 minutes before slicing.
