Peach Upside-Down Cookies

For the Cookies:

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Topping:

1 cup fresh peaches, peeled and sliced

1/4 cup brown sugar

2 tablespoons unsalted butter

1/4 teaspoon cinnamon

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard muffin tin with paper liners or grease it generously.

    Prepare the Topping: In a small saucepan over medium heat, melt 2 tablespoons of unsalted butter. Add 1/4 cup of brown sugar, 1/4 teaspoon of cinnamon, and a pinch of salt. Stir until the mixture is smooth and bubbling. Remove from heat and stir in the peach slices. Set aside to cool slightly.

      Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

        Cream the Butter and Sugars: In a separate large mixing bowl, cream together the softened butter, 1/2 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy, about 3-4 minutes.

          Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

            Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix.

              Assemble the Cookies: Spoon about 1-2 tablespoons of the peach topping mixture into the bottom of each muffin cup. Then, using a cookie scoop or spoon, place the cookie dough on top of the peach mixture, filling each cup approximately 2/3 full.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
