For the Crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, melted

For the Peach Filling:

3 ripe peaches, peeled and diced (about 2 cups)

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

½ teaspoon vanilla extract

For the Cream Layer:

1 8-ounce package cream cheese, softened

¾ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For Topping:

Fresh peach slices

Optional: Mint leaves for garnish

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.

      - In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.

        - Pour in the melted butter and stir until you get a crumbly mixture.

          - Press the mixture evenly into the bottom of the prepared pan. Bake for 15-20 minutes or until lightly golden. Remove from the oven and let cool.

            Create the Peach Filling:

              - In a medium bowl, mix the diced peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract. Toss until the peaches are evenly coated.

                Make the Cream Layer:

                  - In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.

                    - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

                      Assemble the Bars:

                        - Once the crust is cooled, spread the peach filling evenly over the crust.

                          - Next, carefully spoon the cream layer on top of the peaches and spread it out evenly.

                            - Refrigerate for at least 4 hours, or until set (overnight is best for flavor).

                              Serve:

                                - Once set, remove the bars from the pan using the edges of the parchment paper (if used).

                                  - Cut into squares and garnish with fresh peach slices and mint leaves, if desired.
