Peanut Butter and Jelly Bars

1 ¾ cups rolled oats

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 cup brown sugar, packed

½ cup unsalted butter, melted

1 cup creamy peanut butter

1 tablespoon vanilla extract

¾ cup raspberry or strawberry jam (your choice)

½ cup chopped nuts (optional, such as walnuts or almonds)

½ teaspoon cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch (23x33 cm) baking dish or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, all-purpose flour, baking soda, salt, brown sugar, and cinnamon (if using). Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, creamy peanut butter, and vanilla extract until smooth and fully combined.

        Incorporate Wet into Dry: Pour the peanut butter mixture into the bowl with the dry ingredients. Add the chopped nuts if you’re using them. Stir until just combined, being mindful not to overmix; the mixture will be crumbly.

          Press the Mixture: Take about two-thirds of the oatmeal mixture and press it firmly into the bottom of the prepared baking dish. Smooth it out evenly with a spatula.

            Add the Jam Layer: Spread the raspberry or strawberry jam evenly over the pressed oatmeal mixture. Ensure it reaches the edges for an even flavor in every bite.

              Top with Remaining Mixture: Crumble the remaining one-third of the oat mixture over the jam layer, distributing it evenly to create a top layer.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden and the top is slightly firm.

                  Cool Down: Once baked, remove the dish from the oven and let it cool in the pan on a wire rack for at least 15 minutes. Then transfer it to the refrigerator to cool completely for better slicing.

                    Slice and Serve: Once cool, cut into squares or bars. Serve immediately or store in an airtight container at room temperature for up to a week.
