Ingredients

1 cup rolled oats

2 cups unsweetened almond milk (or milk of choice)

2 ripe bananas, mashed (plus 1 extra for topping)

1/4 cup creamy peanut butter

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Chopped nuts (e.g., walnuts or pecans) for topping (optional)

Chia seeds for added texture (optional)

Instructions

In a large mixing bowl, combine the rolled oats, almond milk, mashed bananas, peanut butter, honey (or maple syrup), vanilla extract, cinnamon, and salt.

Stir the mixture until all ingredients are well incorporated and the peanut butter is evenly distributed throughout the oats.

Divide the mixture into individual jars or containers for serving. Make sure to seal them with lids.

Cover each jar and place them in the refrigerator for at least 4 hours, preferably overnight, to allow the oats to soak up the liquid and soften.

In the morning, give the oats a good stir. If the consistency is thicker than desired, add a splash of almond milk to loosen it up.

Slice the extra banana and top the oats with banana slices. Sprinkle with chopped nuts and chia seeds, if using, for added crunch and nutrition.

Enjoy your creamy peanut butter banana overnight oats cold, or heat them up in the microwave if you prefer a warm breakfast!
