1 cup creamy peanut butter

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

½ cup all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

½ cup semi-sweet chocolate chips

½ cup cocoa powder

2 tablespoons unsweetened almond milk (or regular milk)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Peanut Butter Base: In a large mixing bowl, combine the creamy peanut butter, brown sugar, and egg. Mix until smooth and creamy. Stir in the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture into the peanut butter mixture, stirring until just combined.

        Prepare Brownie Swirl: In another bowl, melt the chocolate chips either in the microwave (30 seconds intervals) or over a double boiler. Once melted, mix in the cocoa powder and almond milk until smooth and combined.

          Create the Swirl: Take about 1 tablespoon of the peanut butter dough and place it on the prepared baking sheet. Then, place a small dollop (about 1/2 teaspoon) of the brownie mixture on top. Use a toothpick or a knife to gently swirl the brownie into the peanut butter dough, creating a marbled effect.

            Repeat and Bake: Continue this process until all the dough is used, placing each cookie about 2 inches apart on the baking sheet. Bake in the preheated oven for 10-12 minutes or until the edges are set. The centers may look slightly underbaked – that’s okay!
