Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup natural peanut butter

1/4 cup honey or maple syrup

1/2 cup dark chocolate chips

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Optional: 1/4 cup chopped nuts (walnuts or almonds)

Optional: 1/4 cup shredded coconut

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well incorporated.

Combine Dry Ingredients: In another bowl, mix together the rolled oats, baking soda (if desired for a softer texture), salt, and any optional ingredients like chopped nuts or shredded coconut.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture. Stir until everything is just combined. Avoid overmixing.

Add Chocolate Chips: Gently fold in the dark chocolate chips into the mixture until evenly distributed.

Spread into Prepared Dish: Pour the mixture into the lined baking dish and spread it evenly with a spatula. Press down slightly to ensure it is packed tightly.

Bake: Bake in the preheated oven for 20-25 minutes or until the bars are lightly golden on the edges. A toothpick inserted in the center should come out clean.

Cool Down: Remove from the oven and let it cool in the pan for about 10 minutes. Use the parchment paper to lift the bars out and place them on a wire rack to cool completely.

Cut into Bars: Once cooled, cut into squares or rectangles, depending on your preferred bar size.

Store: Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. These bars also freeze well for future snacks!
