Pear Cranberry Crumble

4 ripe pears, peeled, cored, and sliced

1 cup fresh or frozen cranberries

1/2 cup granulated sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1 tbsp lemon juice

1 tbsp cornstarch

For the crumble topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/2 cup cold unsalted butter, cubed

1/2 tsp ground cinnamon

1/4 tsp salt

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large mixing bowl, combine the sliced pears, cranberries, granulated sugar, vanilla extract, ground cinnamon, lemon juice, and cornstarch. Gently toss everything together until the fruit is evenly coated. Transfer the mixture to a greased 9-inch baking dish and spread it evenly.

      Make the Crumble Topping: In a separate bowl, combine the rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Mix well. Add the cold cubed butter to the mixture. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs. If desired, stir in the chopped walnuts or pecans for added crunch.

        Assemble the Crumble: Evenly distribute the crumble topping over the pear and cranberry filling in the baking dish.

          Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.
