Ingredients
  

2 cups fresh basil leaves, tightly packed

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

1/3 cup pine nuts (lightly toasted)

2 garlic cloves, minced

Salt and freshly ground black pepper, to taste

300g spaghetti or any pasta of choice

Zest of 1 lemon

Juice of 1/2 lemon

Optional: Cherry tomatoes and roasted bell peppers for garnish

Instructions
 

Prepare the Basil Pesto:

    - In a food processor, combine the fresh basil leaves, toasted pine nuts, minced garlic, and grated Parmesan cheese. Pulse until the mixture is coarsely blended.

      Add Oil and Season:

        - With the food processor running, slowly drizzle in the olive oil until the mixture is smooth.

          - Stop halfway to scrape down the sides before continuing.

            - Season with salt and freshly cracked black pepper to taste, along with lemon zest and juice. Blend until fully combined.

              Cook the Pasta:

                - In a large pot, bring salted water to a boil and add the spaghetti. Cook according to package instructions until al dente.

                  - Reserve 1 cup of the pasta cooking water, then drain the pasta.

                    Combine and Coat:

                      - In a large mixing bowl, add the drained pasta and pour in the prepared pesto. Toss gently to coat the pasta evenly. If it seems too thick, add a bit of the reserved pasta water to reach your desired consistency.

                        Serve:

                          - Plate the pesto pasta and garnish with halved cherry tomatoes and slices of roasted bell peppers, if using. Finish with an additional sprinkle of Parmesan cheese and a drizzle of olive oil.
