Ingredients

1 lb ground beef (or ground turkey for a leaner option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

1 clove garlic, minced

1 large egg

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/2 tsp ground ginger

1 cup pineapple chunks (fresh or canned, drained)

1 cup BBQ sauce (homemade or store-bought)

Optional: Chopped green onions for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meatball Mixture: In a large mixing bowl, combine ground beef (or turkey), breadcrumbs, grated Parmesan, chopped onion, minced garlic, egg, salt, pepper, smoked paprika, and ground ginger. Mix everything until well combined but be careful not to overwork the meat.

Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place the meatballs on the prepared baking sheet, spacing them evenly.

Bake the Meatballs: Bake in the preheated oven for about 20 minutes or until cooked through and browned on the outside.

Prepare the BBQ Sauce: While the meatballs are baking, combine the BBQ sauce and pineapple chunks in a medium saucepan. Cook over medium heat until warmed through for about 5 minutes, allowing the flavors to meld.

Glaze the Meatballs: Once cooked, remove the meatballs from the oven and dip or toss them in the warm BBQ sauce mixture, ensuring each meatball is well-coated.

Serve: Arrange the glazed meatballs on a serving platter. Garnish with chopped green onions for an added pop of color and flavor.

Enjoy: Serve immediately as an appetizer or a main dish over rice or with a fresh salad!
