Ingredients

4 slices of sourdough bread

1 cup shredded mozzarella cheese

1/2 cup pizza sauce (plus extra for dipping)

1/4 cup sliced pepperoni (or your choice of toppings: mushrooms, bell peppers, etc.)

2 tablespoons unsalted butter

1 teaspoon Italian seasoning

1/4 teaspoon garlic powder

Pinch of crushed red pepper flakes (optional)

Instructions

Prepare the Bread: Heat a skillet over medium heat. While it’s heating, spread 1 tablespoon of butter on one side of each slice of sourdough bread.

Assemble the Sandwich: Place two slices butter-side down on a clean surface. Spread about 2 tablespoons of pizza sauce on the unbuttered side of each slice. Sprinkle half of the mozzarella cheese over the sauce, add a few slices of pepperoni, then top with the remaining mozzarella cheese. Place the other two slices of bread on top, butter-side up.

Cook the Sandwiches: Carefully transfer the assembled sandwiches to the heated skillet. Cook for about 3-4 minutes or until the bottom slice is golden brown.

Flip and Season: Use a spatula to flip the sandwich. While it cooks, sprinkle the Italian seasoning and garlic powder on the top slice. Press down gently with the spatula to help melt the cheese.

Finish Cooking: Continue cooking for another 3-4 minutes, ensuring the cheese melts and both sides are golden brown. If needed, lower the heat to prevent burning.

Serve and Enjoy: Once completed, remove from skillet, let it cool for a minute, slice the sandwiches in half, and serve with additional pizza sauce for dipping. Enjoy your delicious Pizza Grilled Cheese!
