Ingredients

4 medium-sized potatoes (about 2 lbs)

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1/2 cup all-purpose flour

1/2 cup breadcrumbs (plain or seasoned)

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Vegetable oil (for frying)

Fresh chives or parsley (for garnish, optional)

Instructions

Prep the Potatoes: Begin by peeling the potatoes and cutting them into sticks, roughly 1/2 inch thick. Place them in a large pot and cover with water. Add salt and bring to a boil. Cook for about 10-12 minutes, or until just tender but not falling apart. Drain and let them cool slightly.

Make the Cheese Mixture: In a bowl, combine the shredded cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine.

Stuff the Potato Sticks: Take each potato stick and create a small cavity in the middle using a small knife. Fill each cavity with a generous amount of the cheese mixture. Press the ends of the potato together to seal in the cheese as best as you can.

Prepare for Breading: Set up a breading station with three shallow bowls:

          - Bowl 1: Add all-purpose flour.

            - Bowl 2: Lightly beat the eggs.

              - Bowl 3: Add breadcrumbs.

Coat the Potato Sticks: First, roll each stuffed potato stick in the flour, ensuring it's completely coated. Then dip it into the beaten eggs, letting the excess drip off. Finally, roll it in the breadcrumbs until well coated. Repeat for all potato sticks.

Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium heat. To test if the oil is ready, drop in a small piece of bread; it should sizzle immediately.

Fry the Sticks: Once the oil is hot, carefully add the potato sticks in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Serve: Use a slotted spoon to transfer the fried potato cheese sticks to a paper towel-lined plate to drain excess oil.

Garnish and Enjoy: If desired, sprinkle fresh chives or parsley on top for added flavor and presentation. Serve warm with your favorite dipping sauce (like marinara, ranch, or sour cream) alongside.
