Ingredients

2 salmon fillets (about 6 oz each)

8 oz shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 small onion, chopped

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Lemon wedges for serving

Instructions

Prepare the Seafood: Pat the salmon fillets and shrimp dry with paper towels. Season both with Cajun seasoning, salt, and pepper, coating them evenly.

Cook the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon fillets skin-side down and sear for about 4-5 minutes. Flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add 1 tablespoon of butter. Once melted, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they become soft. Add the minced garlic and cook for an additional minute until fragrant.

Add the Shrimp: Toss in the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Be careful not to overcook.

Create the Sauce: Add the cherry tomatoes and heavy cream to the skillet. Stir to combine and cook for another 2-3 minutes, allowing the sauce to thicken slightly.

Combine and Serve: Gently place the salmon fillets back into the skillet with the shrimp and sauce. Spoon some of the sauce over the salmon and shrimp. Cook for an additional minute to warm everything together.

Garnish: Remove from heat and sprinkle with freshly chopped parsley. Serve with lemon wedges on the side for squeezing over the dish.
