1 cup all-purpose flour

1/2 cup whole wheat flour

1 cup canned pumpkin puree

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup maple syrup

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 cup brewed espresso or strong coffee (cooled)

Pumpkin seeds (optional, for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.

      Combine Wet Ingredients: In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, maple syrup, vegetable oil, eggs, vanilla extract, and cooled espresso until well combined.

        Incorporate Wet & Dry Mixtures: Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; be careful not to overmix.

          Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about two-thirds of the way. If desired, sprinkle a few pumpkin seeds on top of each muffin for added crunch.
