1 cup canned pumpkin puree

2 large eggs

1/2 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 cup granulated sugar

1/2 cup brown sugar

1/2 teaspoon salt

4 tablespoons butter (for cooking)

Prepare the Bread: Trim the crusts off the slices of bread and gently flatten each slice with a rolling pin. This will make it easier to roll them up.

    Make the Filling: In a medium bowl, combine the pumpkin puree, 1 tablespoon of granulated sugar, 1 teaspoon of cinnamon, a pinch of salt, and all the spices (nutmeg and ginger) until smooth.

      Fill the Roll-Ups: Spread about 1-2 tablespoons of the pumpkin mixture evenly along one edge of each flattened bread slice. Roll each slice tightly, starting from the edge with the filling.

        Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, remaining granulated sugar, and cinnamon until fully combined.

          Dredge the Roll-Ups: Gently dip each rolled bread slice into the egg mixture, ensuring it is coated on all sides.
