Ingredients

6 slices of day-old bread (any variety: brioche, challah, or sourdough works great)

3 large eggs

1 cup milk (whole or almond milk for a dairy-free option)

1/4 cup granulated sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup maple syrup (for drizzling)

Optional toppings: powdered sugar, fresh berries, or whipped cream

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and greasing a muffin tin with cooking spray or butter.

Prepare the Bread: Cut the day-old bread into small cubes (about 1-inch size) and set aside in a large mixing bowl.

Make the Custard Mixture: In a separate bowl, whisk together the eggs, milk, sugar, vanilla extract, ground cinnamon, and salt until everything is well combined.

Combine Bread and Custard: Pour the egg mixture over the bread cubes and gently fold everything together, ensuring that all the bread is coated evenly. Let it sit for about 10-15 minutes to allow the bread to soak up the custard.

Fill the Muffin Tin: Divide the soaked bread mixture evenly among the muffin cups, filling each about 3/4 full.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the tops are golden brown and the muffins have risen.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, gently remove them from the tin and transfer to a wire rack.

Add Toppings: Drizzle with maple syrup and top with powdered sugar, fresh berries, or whipped cream if desired. Enjoy warm!
