1 cup cooked and mashed sweet potatoes (about 1 medium potato)

1 cup cooked quinoa

1/2 cup breadcrumbs (use gluten-free if necessary)

1/4 cup grated Parmesan cheese (optional for flavor)

1/2 cup finely chopped spinach or kale

1/2 cup grated carrots

1/4 cup chopped onion

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Cooking spray or olive oil for frying

Prepare the Mixture: In a large mixing bowl, combine the mashed sweet potatoes, cooked quinoa, breadcrumbs, Parmesan cheese, chopped spinach, grated carrots, chopped onion, minced garlic, paprika, garlic powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Shape the Nuggets: Using your hands, form small patties or nuggets from the mixture, about 1.5 inches in diameter. You should be able to make around 12-15 nuggets depending on the size.

      Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This step helps to achieve a crispier texture.
