Quick and Easy Beef Enchiladas

Ingredients
  

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 cup shredded cheddar cheese

6 small flour tortillas

1 can (black) refried beans (15 oz), optional

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Instructions
 

In a large skillet, brown the ground beef over medium heat. Drain the excess grease.

    Add the diced onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic, ground cumin, chili powder, salt, and pepper. Cook for an additional minute until the spices are fragrant.

        Pour in half of the enchilada sauce and stir well to combine. If using refried beans, stir them in until evenly mixed.

          Preheat your oven to 350°F (175°C).

            To assemble the enchiladas, lay a tortilla flat and spoon a generous amount of the beef mixture down the center.

              Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

                Once all the enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with shredded cheddar cheese.

                  Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbling.

                    Allow the enchiladas to cool slightly before serving. Garnish with fresh cilantro.
