Ingredients

2 (6 oz) salmon fillets, skin-on

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups cooked brown rice (or quinoa)

1 cup steamed broccoli florets

1 cup diced cucumber

1 avocado, sliced

¼ cup edamame, shelled

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame seeds for garnish

Fresh cilantro or green onions for garnish, optional

Instructions

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.

Prepare the Salmon: Pat the salmon fillets dry with a paper towel. In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper. Brush this mixture over both sides of the salmon fillets.

Air Fry the Salmon: Place the salmon fillets in the air fryer basket, skin-side down. Cook at 400°F (200°C) for 8-10 minutes, or until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C). Cooking time may vary based on the thickness of the fillets.

Prepare the Bowls: While the salmon is cooking, divide the cooked brown rice (or quinoa) among two bowls. Top each bowl with steamed broccoli, diced cucumber, avocado slices, and shelled edamame.

Assemble the Dish: Once the salmon is done cooking, remove it from the air fryer and let it rest for 1-2 minutes. Gently place the salmon fillets on top of the rice and vegetables in each bowl.

Add Finishing Touches: Drizzle the soy sauce over the bowls, sprinkle with sesame seeds, and garnish with fresh cilantro or sliced green onions if desired.

Serve and Enjoy: Dig into your vibrant and nutritious Air Fryer Salmon Bowls right away, enjoying the combinations of flavors and textures!
