Ingredients

4 cups green cabbage, finely shredded

1 cup carrots, julienned

1 bell pepper, sliced (any color)

1 cup snap peas, trimmed

3 green onions, chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil (or any cooking oil)

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for thickening)

Sesame seeds, for garnish

Salt and pepper, to taste

Instructions

Prep the Ingredients: Start by washing all your vegetables. Finely shred the cabbage, julienne the carrots, slice the bell pepper, and trim the snap peas. Chop the green onions and set aside.

Make the Sauce: In a small bowl, combine soy sauce, sesame oil, rice vinegar, and if using, mix in the cornstarch. Stir until well blended and set aside.

Sauté the Aromatics: In a large wok or frying pan, heat the olive oil over medium-high heat. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

Add the Vegetables: Increase the heat to high and add the shredded cabbage, carrots, bell pepper, and snap peas. Stir-fry for about 3-5 minutes or until the vegetables are tender yet still crunchy.

Season and Serve: Pour the sauce over the stir-fried veggies, stirring to coat everything evenly. If you like, add salt and pepper to taste. Cook for an additional minute to allow the mixture to thicken slightly.

Garnish: Remove from heat, sprinkle with sesame seeds and chopped green onions.

Plate and Enjoy: Serve hot, optionally over brown rice or quinoa for a complete meal.
