2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas (10 inches)

1 small red onion, thinly sliced

1/4 cup fresh cilantro, chopped (optional)

Olive oil or cooking spray (for the skillet)

Sour cream and guacamole (for serving, optional)

Prepare the Chicken Filling: In a large bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is well-coated and set aside.

    Heat Up Your Skillet: Preheat a large skillet over medium heat. Lightly grease it with olive oil or cooking spray.

      Assemble the Quesadillas: Place one tortilla in the skillet. On one half of the tortilla, layer a generous amount of the BBQ chicken mixture, followed by a mix of cheddar and mozzarella cheese, some sliced red onions, and a sprinkle of fresh cilantro if desired. Fold the tortilla in half.
