1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper, thinly sliced (any color)

3 cloves garlic, minced

1 inch piece of ginger, grated

1/4 cup soy sauce (low sodium)

2 tbsp oyster sauce

1 tbsp cornstarch

2 tbsp vegetable oil

1 tbsp sesame oil

Cooked jasmine or brown rice for serving

1 tbsp sesame seeds (optional for garnish)

2 green onions, chopped (for garnish)

Instructions
 

Prepare the Sauce: In a medium bowl, whisk together the soy sauce, oyster sauce, and cornstarch until well combined. If you like it spicier, feel free to add a dash of red pepper flakes or sriracha.

    Slice the Beef: Make sure your flank steak is thinly sliced against the grain; this helps to keep it tender. For easier slicing, you can partially freeze the steak for about 20-30 minutes before cutting.

      Heat the Wok: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the sliced beef to the hot wok in a single layer. Cook for about 2-3 minutes without stirring to achieve some nice browning, then stir-fry for an additional 1-2 minutes until it is nearly cooked through. Remove the beef from the skillet and set aside.

          Sauté Vegetables: In the same wok, add a bit more oil if necessary, then toss in the minced garlic, grated ginger, broccoli florets, and sliced bell pepper. Stir-fry for about 4-5 minutes until the vegetables are bright and tender-crisp.

            Combine: Return the beef to the skillet along with the prepared sauce. Stir everything together and cook for another 2-3 minutes until the sauce has thickened and the beef is cooked through.

              Finish with Sesame Oil: Drizzle the sesame oil over the stir-fry, give it a final stir, and remove from heat.

                Serve: Serve immediately over cooked rice, and garnish with sesame seeds and chopped green onions, if desired.
