1 lb beef sirloin, thinly sliced

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vindaloo spice paste (store-bought or homemade)

1 can (14 oz) diced tomatoes

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

1 cup beef broth

2 medium potatoes, diced (optional)

1 teaspoon salt (adjust to taste)

Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Marinade: In a medium bowl, combine the sliced beef with the vindaloo spice paste, ensuring the meat is well-coated. Let it marinate for at least 15-20 minutes to absorb the flavors.

    Sauté the Onions: In a large skillet or heavy-based pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent and slightly caramelized, about 5-7 minutes.

      Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

        Cook the Beef: Increase the heat to high and add the marinated beef to the skillet. Sear until the beef is browned on all sides, about 3-4 minutes.

          Incorporate Tomatoes and Seasonings: Pour in the diced tomatoes (with their juices), apple cider vinegar, brown sugar, and beef broth. Stir to combine all ingredients. If adding potatoes, include them at this stage.

            Simmer the Vindaloo: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, stirring occasionally, until the beef is tender and the potatoes (if using) are cooked through.
