Ingredients

4 cod fillets (about 6 ounces each)

3 tablespoons soy sauce

2 tablespoons fresh ginger, grated

1 tablespoon honey

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon rice vinegar

1-2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions

Prepare the Marinade: In a small bowl, whisk together the soy sauce, grated ginger, honey, sesame oil, minced garlic, and rice vinegar until well combined.

Marinate the Cod: Place the cod fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the cod, making sure each fillet is well coated. Let it marinate for at least 15 minutes (up to 1 hour in the refrigerator for more flavor).

Preheat the Pan: Heat a non-stick skillet over medium-high heat.

Cook the Cod: Remove the cod from the marinade, allowing excess marinade to drip off (reserve the marinade). Season the fillets lightly with salt and pepper. Place the cod fillets in the hot skillet and sear for about 4-5 minutes on each side, or until the fish is golden brown and cooked through (internal temperature should reach 145°F).

Add the Marinade: In the last minute of cooking, pour the reserved marinade into the pan, allowing it to bubble and thicken slightly, coating the cod fillets.

Serve: Transfer the cod to plates, drizzle with the thickened glaze from the pan, and garnish with sliced green onions and sesame seeds.

Enjoy: Serve warm with steamed rice and your favorite vegetables!
