Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

1 tablespoon unsalted butter

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust to taste)

400g canned crushed tomatoes

1 cup heavy cream

Salt to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan, to serve

Instructions

Sauté Aromatics: In a large skillet over medium heat, heat the vegetable oil and butter. Add the chopped onion and sauté until translucent (about 5-7 minutes). Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

Spice It Up: Add the ground cumin, coriander, garam masala, turmeric, and chili powder. Cook for 1-2 minutes to toast the spices, stirring constantly to prevent burning.

Chicken Time: Add the chicken pieces to the skillet, cooking until they are browned on all sides (about 5-8 minutes). Make sure the chicken is cooked through.

Make the Sauce: Pour in the crushed tomatoes and season with salt. Stir well to combine all ingredients. Bring the mixture to a gentle simmer and let it cook for 10 minutes, allowing the flavors to meld.

Creamy Finish: Lower the heat and slowly stir in the heavy cream. Simmer for an additional 5 minutes, adjusting the seasoning if needed. The sauce should be thick and creamy.

Serve: Remove from heat and garnish with freshly chopped cilantro. Serve your delicious Butter Chicken with warm basmati rice or naan for dipping.
