Quick Taco Wraps with Ground Turkey Filling

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

Salt and pepper, to taste

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup lettuce, shredded

1 medium tomato, diced

1 avocado, sliced

Salsa or hot sauce, for serving

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Cook the Vegetables: Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until they’re soft. Add the minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 6-8 minutes.

        Season the Mixture: Stir in the taco seasoning, black beans, and corn. Cook for another 2-3 minutes until everything is heated through. Taste and adjust with salt and pepper.

          Warm the Tortillas: While the filling is cooking, warm the tortillas in a separate pan or microwave, just enough to make them pliable.

            Assemble the Wraps: Lay a tortilla flat, spoon a generous amount of the turkey filling onto the center. Top with shredded cheese, lettuce, diced tomato, and slices of avocado.

              Wrap Them Up: Fold in the sides of the tortilla and roll it up from the bottom to the top to create a wrap. Repeat with remaining tortillas and filling.

                Serve: Cut the wraps in half and serve with salsa or hot sauce on the side.
